Can I upload multiple logos, etc. to choose from? (Like upload to a central repository per school but assign to multiple ceremonies.)

Yes, each event can have different logo and colors, but not multiple logos within an event. In the Theme Editor for an event, the logo and colors you selected when onboarding will be displayed. You can edit these here if you want a different logo or color for that event.
